  • Fennel 4
  • Cicioni 80 g
  • Shallot 4
  • Sugar to taste
  • Salt and pepper to taste
  • Extra virgin olive oil to taste

Preparation

Wash and clean the fennels, then divide them into slices and soak them in plenty of boiling and salted water for about 20 minutes. If you prefer a different cooking method, you can also proceed with baking or steaming.

During the cooking of fennels, clean and cut the shallots in half. Sauté them in a pan with a drizzle of oil and, once brown, add about 2 tablespoons of sugar. Cook for about 10 minutes until caramelized.

Lay the shallots cut in quarters on the boiled fennels. Finally, flavor with black pepper and flakes of Cicioni to taste.
